Cucumber and Grated Carrot Salad

2 medium-size Cucumbers
2 medium-size carrots
Creamy Dill Dressing

  1. Peel the cucumbers and slice them in half length-wise.  Scoop out the seeds with a spoon and discard them.  Slice the cucumbers in 1/4-inch-thick slices and divide them equally among serving plates
  2. Peel the carrots and grate them.
  3. Mix the carrots and cucumbers together.
  4. Stir in the dressing.

CREAMY DILL DRESSING
1/2 cup full fat greek yogurt
1/2 cup mayonnaise
1 teaspoon red wine vinegar
2 teaspoons olive oil
1 clove garlic, minced
1 tablespoon minced fresh dill (or 1 1/2 teaspoon dried)
Freshly ground pepper to taste

Mix all the ingredients together in a medium-size bowl until well blended.  Chill until ready to use.
